Swedish food technology startup Millow has secured €2 million in funding to scale the production of its mycelium and oat based protein. The company uses a dry fermentation process to create a meat alternative that requires minimal water and processing. By utilizing modular units, Millow aims to produce over 430 tonnes of product annually by the end of the year. The startup plans to launch its ingredient in the Nordic foodservice market, targeting restaurant chains and public sector kitchens. The product is designed to be used in existing culinary formats without requiring changes to standard cooking methods. Millow intends to focus on commercial execution and establishing recurring partnerships before considering international expansion. The company emphasizes a clean label approach with few ingredients to compete directly with conventional protein prices.
