Based on ADM’s 2025 Alternative Protein Landscape Report, the global protein market is evolving as consumers seek out smarter, cleaner, and more diverse protein sources driven by health, sustainability, and taste. The report identifies three key consumer groups—flexitarians, vegetarians/vegans, and “carefree” consumers, who are fueling a shift toward both legacy ingredients like soy and chickpeas, and next-generation solutions such as fermentation-derived and hybrid proteins. The rise of GLP-1 weight-loss drugs is also impacting this trend, with more consumers prioritizing protein for weight management. For brands to succeed, the report suggests a strategy that blends familiar ingredients with novel ones, while focusing on transparency, taste, texture, and versatile, value-driven product formats.
