This doctoral project aims to establish ultra scale-down (USD) approaches for rapid evaluation of the recovery of cultured mammalian cells by centrifugation. Centrifugation is a key operation in cellular agriculture processes enabling the continuous recovery and concentration of mammalian cells prior to their formulation into either unstructured or structured cultivated meat products. UCL has pioneered the development of USD technologies and they will be applied here to aid our understanding of the large-scale recovery of the different cell types, i.e. muscle and fat cells, commonly found in cultivated meat products. The project will also establish a range of analytical techniques to characterise the ‘quality’ of the recovered cells with regard to their formulation into meat products, the impact on product shelf-life and adherence to regulatory requirements. The industrial application of the project outcomes will be explore in collaboration with the CARMA industrial partners.
