Alex Crisp attended an exclusive tasting hosted by Umami Bioworks, sampling cultivated white fish and caviar. The fish, served beer-battered, closely mimicked conventional fish in taste and smell but had a slightly off texture. Umami, a Singapore-based company, aims to launch cultivated seafood globally, pending regulatory approval. The event highlighted both the potential and challenges of lab-grown food, including scalability and consumer acceptance.
