The IFFA 2025 event in Frankfurt highlighted the future of proteins, with cultivated meat, fermentation, and clean label innovations taking center stage. Exhibitors showcased hybrid meat products blending plant and animal proteins, targeting flexitarian consumers seeking healthier, sustainable options. Companies like Hydrosol and ICL Food Specialties demonstrated cost-effective hybrid solutions, while Meatable emphasized cultivated meat’s efficiency, producing meat in days versus years. Fermentation-derived proteins, such as mycoprotein and yeast-based ingredients, were praised for sustainability and functionality, offering binding, texture, and gelling benefits. Price parity between plant-based and conventional meat remains critical for wider adoption, with hybrid and cultivated meats positioned as key solutions amid climate and resource challenges.
