US startup Offbeast has developed a manufacturing process to create whole-cut blended meat products consisting of 50% animal protein and 50% plant-based ingredients. The technology, which evolved from the company’s 3D printing and fiber assembly research, aligns meat and plant fibers to replicate the muscle structure of traditional steak. This process is designed to integrate into existing industrial meat processing lines and can utilize various meat inputs, such as minced beef or fat. By combining these ingredients, the company aims to produce structured cuts like beef tips that maintain the texture of conventional meat while offering economic advantages to producers. Offbeast currently operates a production facility in Baltimore capable of producing three tonnes of protein per shift, targeting both retail and foodservice markets to provide a sustainable alternative to traditional meat products.
