Umami Bioworks, a Singapore-based cellular agriculture company, has introduced cultivated caviar for high-end markets. The product blends cultured sturgeon cells with plant-based ingredients, targeting sustainability-conscious Gen Z and millennial consumers driving caviar demand. It aims to address environmental and ethical issues in conventional caviar production, including overfishing of critically endangered sturgeons. The $402M caviar market has grown 74% since 2020, fueled by TikTok trends. Umami Bioworks joins other companies developing cultivated and plant-based caviar alternatives to meet demand more sustainably. The startup has submitted regulatory applications in multiple markets and is also working on cultivated fish pet treats.
